Can lab results depend on diet?

I feel a little out of place on this website but maybe someone could give me some advice. I have had difficulties for years and years and the only relief I get is from a restricted diet. Because of some of the symptoms I had and lab results I came across Wilson's Disease. I was having mental health and physical health issues. I asked to be tested cerulaplasmin /24 hour urinalysis and blood serum copper. The tests were on the low end. Blood serum and Cerulaplasmin were within normal but at very low end of normal. My 24 hour urinalysis was also very low.

The question I have is should I ask for a penicillamine challenge 24 hour urine copper? Maybe that one is low because of my low copper diet and the results don't mean anything.
