I tried this recipe last night, which we really enjoyed. I got it from cooks.com but I modified it a little.

1 lb yellow squash
1/4 c chopped onion
1/4 c chopped green pepper
1 c herb stuffing mix
2 tbsp. butter
Parmesan cheese

Boil whole squash in salted water until tender. Cool enough to handle, then split in half. Scoop out the inside of squash. Cook pepper and onion in butter until tender, combine with squash you scooped out, mash.

Stir in stuffing mix. Fill squash halves with mixture, sprinkle with Parmesan cheese. Place in greased casserole dish and bake at 350 degrees for 30 minutes.

I went to a health food store for the stuffing mix and they told me they don't have it this time of year. (I guess your not suppose to eat it now) So I went to the grocery store and bought herb stuffing (I figured this was better considering a possible alternative).

I hope you can join me in listing healthy or somewhat healthy recipes. Let's stay away from meat, which we probably all need to eat less of.

By the way, when the squash was cooking, believe it or not, it smelled like lasagna.

Okay, now my stomach is growlng. I'm just going to squeeze an orange and add water.

I hope this makes us all eat better and loose some weight if that is our coal. If this is a drastic change for you and you need to loose weight, I'm pretty sure you will.

I was hoping to get some quick easy recipes, but I guess I will give another. We had this one last night.

Most of the time I do not combine fruit wth any other foods. Although, there are certain fruits I will mix.

I don't do the cutting or slicing...mostly because I don't have to and I may cut myself.

Cabbage Salad

- 1/4 green or even purple cabbage
- 1 medium tomato
- few slices of onion (we used white onion)
- " Real Salt" (can be purchased in the health
food store) to taste
- 1 lime to taste

Shred 1st three ingredients, apply salt and lime. Mix and enjoy!

Thank you, Gail, for the recipes. The squash recipe sounds great. I will have to try it before everything goes out of season. Heare is a recipe I tried recently. It was good but I haven't perfected it yet. I got it from allrecipes but I tweaked it, of course.

Rosemary Red Potatoes

6 red potatos, washed and quartered
1 small yellow onion
2 garlic cloves
1 tsp Dried Rosemary
Salt and Pepper to taste
2 tbs olive oil

Combine all ingredients in baking dish. Bake at 350 for 35 to 40 minuts or until fork tender. Stir occasionally for even cooking. I covered it and the potatos turned out a little soft. I will leave it uncovered next time.

I am sure that you could use any herbs that you like in this recipe. I am going to experiment more.
