I've been eating a lot better lately mostly spinach salad with yellow and red peppers, tomatoes, mandarin oranges and raspberry vinagerette and it seems to improve my symptoms. I haven't been eating this only but I can tell a difference already.
Thanks for sharing your experience, Gisu. It's hard for me to think and eat mostly vegetarian/limited animal products but am trying hard to give it a try. One of my new favorites is smoothies made with frozen fruit.

since I have been diagnosed sarc I drastically changed my diet but it has not been a choice, it was a spontaneous reaction of my body.
I started being fed up with sugars, carbs and most of the food which are suggested to be avoided in anti-inflammatory diet. I simply don't wanted them anyore!
I introduced nuts and eat mostly vegetables (but not fruits) and have developed a carb intollerance.

That is exactly my diet since january 2008.
Today I am in remission, keep a very halthy diet, exercise 5 times a week and feel fine.
I do not know if diet made it all, I can say that I simply listened to my body and adjusted my diet accordingly and I really feel the difference.
It might be not easy, but try to follow Delirium's suggestion for a month or 2 and see how it goes.

I have been put on a gluten, wheat and dairy free diet-these items are usually the culprit for inflammation not only in the joints but in the gut/liver. It has helped with the fatigue, and I am slowly getting off sugar-i have reduced my usageand am down to one pepsi 12 oz a day.
drinking water is very important also. The best way to cut down on breads, white or wheat pasta, and increase grains and vegetables/fruit.

I thought that tomatoes were bad for inflammatory disease?
I haven't eaten any meat for over 25 years, but do eat fish occasionally. My blood tests just revealed low kidney function and high cholesterol as well as the sarcoid, so now am increasing my oily fish intake and reducing wheat/gluten products and of course saturated fats. So no more biscuit or cake feasts for me .... don't miss meat but will REALLY miss my sweet stuff! Lol.
It's also called the cancer diet. I tried it for a few months. It's kind of hard to stick to if you're not used to eating all healthy foods. We're so integrated with processed foods, that you have to make a real effort to do this diet. But it won't hurt you to eat like this, it is very healthy. Be well!
I have been following an anti-inflammatory diet now for well over 12 months. It really makes a difference. It makes such a significant difference to my health that it is actually easy to stick to because it means natural pain relief & more energy for me. The Norwegian Sarcoidosis Diet has been posted here & is exceptional. You can also google The Revised Mediterranian Food Pyramid, which is the way I eat & very similar. It is the proven way to eat for optimum good health, not just for Sarcoidosis sufferers. Please do not be foolish enough to cut out all carbs. We need wholegrains and unprocessed carbs. They are our bodies preferred source of fuel. Eliminate the processed foods, white flour & high sugar & fat products. Eat as much food containing omega 3 as possible. By the way, this is not a diet, but the way we all should be eating. Everyone falls off the wagon occasionally. You will find that if you stick to the general diet, the longer you do it, the better you will feel and if you occasionally slip up it won't matter. Keep in mind that it is important to avoid foods containing flavor enhancers, preservatives & concentrates as these can be triggers in most of us.
