Vegetarian, organic diets

I would love to be able to swap recipes with other Vegetarian, organic eaters like myself!! LOL!! I am pretty creative but after awhile a carrot is just a carrot and broccoli is just broccoli, etc.

hello, h.o.p.e.! i'm a vegetarian as well, and i'm really looking forward to the farmer's markets starting up around here mid-may. i try to eat organic food most of the time - when it's practical and affordable. i'd love to share food and recipe ideas, especially with the farmer's market season starting up. i get more creative when there's a whole new array of produce to choose from. do you go to local farmer's markets?

I do!! Ours is starting back up this weekend!! My son and I make a whole morning out of our trip... He loves the hustle and bustle when the bell rings and everybody runs for their foods and goodies!!

Very cool that you start your farmer's market this weekend. I have to wait a couple more weeks. Let me know what you get that's exciting. I really like the spring produce....yummy lettuces, and asparagus, and....I'm not even remembering all the cool weather produce! We don't have any sort of bell to start things - at least not that I know of (I'm not there when they first open!).

i love making my own pizzas out of boboli crusts. i use alfredo sauce instead of a tomato sauce and of course mozzarella cheese. then i top it with spinach, mushrooms, and roma tomatoes. sometimes i use different kinds of peppers or onions, either way it's always amazing.

A great veggie recipe is eggplant parmesan... delicious and filling. If you don't eat dairy products you could use a tofu chees substitute.

Beats carrots and broccoli.

Just remember to salt your eggplant to get rid of the bitterness. I alwas peel off the skin as I find that the most bitter.

My favourite site for recipes is vegweb.com, since there are loads of recipes and you can read other people's opinions and ideas.

Homemade veggie burgers that you freeze and bake as needed.

I don't mind sharing the recipes if anyone is interested.
