I don't love cooking. I'm okay at it, I just don't look forward to doing it. My husband and I eat the same few staples over and over and over again. And then we eat them some more. Does anyone have any really easy, quick dinner recipes that involve mainstream ingredients? I'm great at making chili, tacos, and various roasts. But I'd especially love to learn how to make a healthy casserole that will last a few days or even a week!
Please, inspire me to step away from the boring food!

here goes...
Chicken and veggies with pasta
serves 2
1 teaspoon olive oil
2 boneless skinless chicken breasts, cut into bite size pieces
1/4 cup onion, chopped (optional)
2 cups frozen veggies (I use Normandy blend)
1 cup pasta suace
whole wheat pasta (I use 1/2 serving per person 100 calories)
Cook pasta according to package directions. Saute chicken in oil with onion (if using) until chicken is nolonger pink. add veggies and pasta sauce until heated through about 10 minutes.
