Declared Non-Celiac...but how do you test for Gluten intolerence?

My first post. Finally got a colonoscopy to determine once and for all whether I had celiac or not. Results were negative. I have been gluten free for 1.5 years, but loose stools and some exhaustion are starting to rear their ugly head again when I use certified gluten free oat rolls. Due to religious obligations, I eat 4 small rolls over a 30 hour period(four separate meals). I am afraid to go back to regular rolls, but concerned over results with a gluten free product. How does one determine gluten intolerence and would the gluten free rolls be causing the symptoms or should I chalk it all up to IBS and call it a day? Inquiring minds want to know. Thank you.

Currently, there are no recommended methods to screen for non-celiac gluten sensitivity. It is diagnosed by first excluding celiac disease and wheat allergy and then conducting a gluten elimination diet. If you are experiencing symptoms even while maintaining a gluten-free diet, it's best to talk to your doctor. There could be a number of reasons for the symptoms, such as accidental gluten ingestion or another food sensitivity. You also may be intolerant to oats of any kind, including certified gluten-free oats. Your doctor can help you investigate potential causes.
